Absolutely Delicious! You need to try this!

A few weeks ago, I needed to reorder another 4# bag of BB Hollywood rub, and saw what I thought was a mistake . . . 4# bags of Zesty Lime for $5.95. I put two in my cart and discovered the price was correct (my mistake was not buying four or five at that price).

Three days later I received the shipment and had a 10# pork loin ready to cut and smoke. I sliced half into 1" chops and the other 5# half I wrapped with my own smoked bacon made several months ago using the BB celery juice cure recipe.

I seasoned all the chops and the bacon-wrapped loin with Zesty Lime and put them on my Camp Chef SmokePro pellet grill at 225 F until the chops reached 140 F -- about 90 minutes. The bacon-wrapped portion took another hour or so to reach 145 F. I ate one chop, vacuum packed everything else and put them in the freezer. Last weekend (11/12/23), I used my sous vide circulator to rewarm the defrosted, vacuum packed smoked bacon-wrapped loin to 145F for 6 hours. Couldn't be happier with the taste!

Yesterday (11/14) I bought 13# of chicken drumsticks ($0.79/lb) -- a total of 28 drums -- removed the skins, doused them with Zesty Lime rub, and put them on the Camp Chef at 225 F for 2-1/2 hours (to 120 F), then increased the heat to 350 F for about 30 minutes (to 145 F), lightly basted all the drums with Sweet Baby Ray's Original, and back on the grill for about 15 minutes (to 165 F). Incredibly good . . . juicy and tender to the bone . . . and delicious flavor like none other.

You know there's lime in the rub as soon as you open the bag. The paprika provides marvelous color, and the combination of other spices that make up the blend is amazing. Can't wait to try this on some ribs and tri-tip . . . maybe even a brisket!

I think Zesty Lime is going to become my favorite BB rub.
